Chipotles galore

Although I have more than enough leftovers in the freezer, I wanted to use up a few ingredients this past week. So inspired by the leftover chipotle peppers, I decided to combine some chipotle peppers, Great Northern beans, and chicken stock to make a spicy bean spread. I used this spread in some quesadillas (along with some onions, avocado, chorizo, and loads of cilantro) and in a breakfast burrito. Both were quite tasty, and there's still enough left for at least one more burrito. Hmm, maybe I should throw together a fresh salsa, too...

Update: I ended up making a salsa similar to this one, sans the lentils but with some green pepper thrown in. I didn't have any fresh limes, so I used lemon juice and some lime powder instead. I also added some southwest seasoning mix that I found in my cupboard. This went quite nicely with my next breakfast burrito :-)
