I'm looking forward to trying some new recipes this weekend. Lately my breakfasts have reverted back to the usual -- eggs, rice, greens and hot sauce, all served up in my new red and black bowls that B gave me for xmas. And I've been lazily coasting all week on leftovers for supper, although I have been making an effort to include a green salad. My usual green salad is pretty boring, so I've been trying a few new ingredients to mix things up a bit. Tonight it was mushrooms, red onion, grated raw beet and kalamata olives on a bed of mixed baby greens, topped with a mustard-balsamic vinaigrette. (I was inspired to try the grated beet from yet another "superfoods" article -- can tinned sardines be far behind?).
I also found this NY Times article quite interesting. Mark Bittman lists a slew of items that (according to him) have no place in a foodie's pantry, and suggests alternatives for each one. I can pat myself on the back for not violating this list in certain cases, but I also rely on some of the "out" items -- like dried basil, canned beans, spices that are older than a year (possibly older than some of my nephews)... :-)
Anyways, I did make something quick for supper tonight. I was planning on using the extra tomato-coconut sauce on some chicken, but Safeway had jumbo prawns on sale for half price and I couldn't resist. So, prawns again, but this time I added in some slivered green mango and served it on a bed of peppery arugula. Considering that this is still technically leftovers, it was quite tasty.
