Caesar salad with Cajun chicken

I've been really craving salads recently, probably due to the summer weather we've been enjoying here in Calgary, and I had this salad twice in the past week. I just noticed that M posted a Caesar salad recipe on her wonderful blog, so I decided to post mine too. More salad recipes to follow...

Caesar salad with Cajun chicken

Cube some white bread and toast lightly in the oven -- no seasoning required, this is just for texture. Sprinkle cubed chicken breasts with some Emeril Lagasse's creole seasoning mixture (I use lots!) and saute the chicken in a non-stick pan (don't add any oil). Meanwhile, whisk the following ingredients to make the dressing (adding as much oil/vinegar as you want):

1 tbsp capers, finely chopped
2-3 anchovy fillets, finely chopped
4-5 cloves garlic, minced
1 tbsp Dijon mustard
1 egg yolk
freshly ground black pepper
few drops Worcestershire sauce
olive oil
tarragon white wine vinegar (if you have fresh lemon juice, add that too)

Tear some romaine lettuce into a big bowl, toss with some dressing, and plate. Top with a handful of croutons and some of the chicken pieces, and tada - supper! If you're down with the dairy products you can also add a whole whack of freshly grated Parmesan cheese.
