Fresh herb and tomato scramble

Wow, it's been over a month since I last posted. Or rather, since I last cooked anything! This is quite a bland entry, but I'm trying to ease back into this. Hopefully I'll make something a little more adventurous tonight. Assuming I can remain awake long enough :-).

I woke up this morning feeling jet-lagged and pretty hungry. My empty fridge wasn't exactly screaming breakfast food, but I did manage to cobble this dish together.

Fresh herb and tomato scramble
Serves one

Mince a small handful of fresh herbs - I used thyme, oregano, and rosemary (basically what I have growing outside). Saute some sliced cherry tomatoes until they've softened a bit, and add some beaten eggs to the pan (seasoned of course). Stir the egg mixture, and add the herbs when the eggs are just about done. Ta da.
