I made some ham stock last weekend and used some of it for this soup (along with some of the cooked ham). I was looking for some different recipes to try, something in the bean or pea family, and I remembered this site. I decided against using a "trotter" in the stock, though. Maybe I'd try it for some fancy French recipe, but I'm not quite adventurous enough to just casually add it to any old dish.
Dutch pea soup
adapted from this recipe
ham stock + water (maybe 8-10 cups liquid in all?)
2 c green split peas
1/2 onion, chopped
1/2 leek, sliced
1 stalk celery, chopped
several sprigs fresh thyme
1 potato, diced
2 bit chunks of ham, diced
1/4 tsp nutmeg
1 tbsp fresh lemon juice
Combine first six ingredients in a pot and bring to a boil. Reduce the heat and skim off any foam. Season with some freshly ground black pepper. Cover and let cook for a couple of hours. Add the potato and ham and continue cooking for half an hour. Add the nutmeg and lemon juice, and season to taste.
