Pork with vegetables in a spicy bean sauce

Although I went out today intending to stop at the farmers market, I ended up at T&T superstore instead. I wanted to pick up some interesting greens for my breakfasts, and at some point the items in my basket began to look a lot like supper. (Hey, who put that pork loin in my basket?)

Pork with vegetables in a spicy bean sauce

fermented black bean paste
crushed red pepper and garlic sauce
soy sauce
mirin
pork loin, sliced paper thin (thank you, T&T :-)
miniature eggplant, sliced
oyster mushrooms, roughly chopped
baby pak choy, roughly chopped
green onions, julienned
bean sprouts
soba noodles, cooked and drained
Thai basil

Combine the first four ingredients to make a sauce, thinning with water to desired consistency. Saute the pork and eggplant, add the sauce, and cook until the pork is done and the eggplant has softened. Add the mushrooms, pak choy, green onions, and bean sprouts, letting the mixture simmer for a few minutes after each one. Serve the stirfry with the soba noodles and top with some slivered Thai basil.
