It's a bit too warm to cook today, but I wanted to make a quick sauce to accompany some pre-cooked prawns. After perusing a few recipes, and taking into account the limited amount of salsa-esque ingredients in my refrigerator, I came up with this.
Hot tomatillo salsa
3 tomatillos
3 cloves garlic
handful cilantro
3/4 tsp chipotle peppers in adobo sauce
1/2 Anaheim pepper
Blend all of the ingredients to the desired consistency, adding water to thin the sauce a bit. Heat a small amount of oil in a pan and add the salsa; let it simmer for a few minutes. Season to taste and serve.
