Final recipe of the day - a stir-fry of pork with assorted veggies. And pretty much every condiment that I had in the fridge door. It reminds me of the "pass the spoon" game we'd play as kids.
Except that this time it was voluntary. (Shudder.)
Pork with eggplant
Make a sauce using a combination of: stock, soy sauce, garlic, ginger, some sort of hot sauce (sambal olek, garlic chili sauce, etc), mirin, oyster sauce, black bean sauce, etc - whatever you've got on hand. Saute some thinly slice pork loin for a bit, then add some sliced eggplant. Add the sauce, and let this simmer until the pork is completely cooked and the eggplant has softened. Toss in some torn up greens if you have them. Just before it's done add any veggies that you want to be on the crisp side - like snow peas. Season with szechuan pepper and it's done.
