Spiced banana apple loaf

When I discovered a smattering of speckles on my bananas this morning I knew that they were destined for baking. I like my bananas to be slightly tinged with green, and can't stand them when they start to get age spots. (Seriously, a few flecks and they're banned from the fruit bowl.) But I made banana bread fairly recently and I didn't want to make exactly the same recipe. (Plus, I'm out of nuts - nuts!) So after taking stock of my imaginary pantry, and perusing a few recipes online, I plucked an apple out of the big box of BC fruit that mom and dad gave me and got cracking.

I didn't peel the apple before grating it. I thought that the skin would provide a bit of extra texture to the final product. Or maybe I was just lazy.

Spiced banana apple loaf

2/3 c dark brown sugar
1/3 c margarine
2 eggs
4 bananas, mashed
1 apple, grated
1 c whole wheat flour
1 c white flour
1 tsp baking soda
random mix of spices (cinnamon, freshly ground nutmeg, cloves, ginger, pepper, whatever looks good)
pinch of salt

Preheat oven to 350. Cream the sugar, butter and eggs. Stir in the bananas and apple, followed by the dry ingredients. Pour the mixture into 3 mini loaf tins (greased) and bake for 40-45 min. Cool, consume.
