Lentil soup with chorizo and kale

This soup is basically an excuse to use my inky-black beluga lentils. They're so tiny and adorable, so much cuter than that common (yet equally tasty) reddish-green-brown lentil :-). And I really don't need a special reason to cook chorizo, do I?

While this isn't quite as delicious as M's infamous sausage and kale soup (one of my all-time favourite soups), it is a tasty alternative. And who can't use more legumes in their diet? :-) 

Lentil soup with chorizo and kale

4 Spolumbo chorizo sausages
1 large onion, chopped
6 cloves garlic, minced
red pepper flakes
1 c beluga lentils
7 1/2 c chicken stock
1 massive bunch kale (stems removed), torn

Cook the chorizo in your preferred fashion and set aside. Saute the onion until softened, then add the garlic and saute a bit more. While this is cooking add some freshly ground black pepper and some red pepper flakes. Add the lentils and chicken stock, and bring to a boil; let simmer for 20 minutes. Slice the chorizo and add it to the pot - let simmer for another 20 minutes. Add the kale and simmer for another 5 minutes. Adjust the seasonings and it's ready to serve.
