I wasn't in the mood to cook today so I just threw together a quick salad. I'm a bit in denial about the whole winter-in-late-March thing...
Southwest Black Bean Salad
black beans
corn
red pepper
red and white onion
tomatoes
jicama
cilantro
lime juice
olive oil
southwest seasoning mix
Chop the veggies and herbs and throw everything into a big bowl. Add freshly squeezed lime juice, olive oil and the seasoning mix. Toss to combine and let it sit for a while. Serve over a bed of mixed greens.
