Since I didn't cook anything this past weekend I felt compelled to make something on a (gasp) work night. So last night I threw together a quick salsa to support some burrito initiatives.
Black bean and corn salsa
1 can black beans
1 can corn
red onion, chopped
green pepper, chopped
anaheim pepper, chopped
cilantro, chopped
garlic, minced
southwest seasoning
lime juice
olive oil
Combine all of the above and season with freshly ground black pepper and sea salt.
Super-hot salsa
I recently bought a jar of Newman's Own Salsa. Although one shouldn't speak ill of the dead, I figure the dead's salsa is fair game. It is crap -- one of those salsas that basically tastes like tomato sauce. Muy disappointing. Luckily I was able to doctor it up a bit by adding some jalapeno pesto and chipotle pepper. This improved the flavour but also increased the heat by, like, a bajillion.
{whatever}, black bean and corn burrito
Assemble the following in a warm whole wheat tortilla: {whatever}, super-hot salsa, black bean and corn salsa. Eat, enjoy.
I tried this with some scrambled eggs and it was quite yummy. I think chicken would also be tasty.
