I had planned to make some fish tacos but decided against frying fish for this -- after all the fried food I ate in Spain I definitely don't need any more right now. The verdict: pretty tasty.
Seafood tacos
adapted from this recipe
tomatoes, seeded and chopped
red onion, chopped
cilantro, chopped
garlic, minced
lime juice
mayonnaise
jalapeno pesto (see earlier post)
chipotle pepper
lime juice
whole wheat tortillas
"imitation seafood" -- let's call it crab meat
Savoy cabbage, thinly shredded
Combine the first five ingredients to make a simple fresh salsa; season to taste. Combine the next four ingredients to make a creamy sauce; season to taste. Heat both the tortillas and the crab meat. To serve: place some crab meat in the tortilla, add some cabbage, spoon on some salsa, and drizzle with the creamy sauce.
