This recipe is really basic. It's barely post-worthy, but after such a long hiatus I was tempted to post my recipe for opening a Clif bar. (I tear the wrapper just so...) My fridge and pantry were completely bare after living a few days as a shut-in, so I didn't have many options for lunch. When I got home from the grocery store I was absolutely starving, and although it was hot out I was suddenly craving a burrito. And I wanted it five minutes ago. Black bean flakes to the rescue!
I was tempted to call these "instant", but canned refried beans would've been faster. But would they taste like Nelson? No they would not!
Quick black bean burritos
1 c black bean flakes
seasoning (cumin, southwest seasoning, cayenne pepper, s and p, whatever)
salsa (I used a mixture of red and green)
green onions, chopped
roma tomato, squeezed and chopped
avocado, chopped
cilantro, chopped
whole wheat tortilla
Place bean flakes in tupperware bowl and add 3/4 c boiling water. Cover and let stand for 5 minutes. (I used the tupperware bowl to store the leftovers - obviously I was too lazy to wash another bowl.) Once softened, stir in seasoning and salsa (to taste). Smear some on a tortilla, and top w/ onions, tomato, avocado, and cilantro. Inhale.
